Tahini Biscuits
Ingredients
150g Honey
150g Butter
100g Coconut sugar
100g Tahini
250g Plan flour
1/2 tsp baking powder
1/2 tsp bi carb soda
1 whole egg + 1 egg yolk
Additional toppings: Chocolate chips, salt, sesame seeds
Method
Place the honey in a small saucepan and bring to the boil (browned honey will provide an excellent flavour here).
Add in the butter to the saucepan, remove from the heat and allow to melt.
In a large bowl, combine the sugar, eggs & tahini and mix to combine.
Gradually add in the honey & butter mixture to the sugar, eggs and tahini. Mix to combine.
Fold in the flour, baking soda & bi carb.
Place the mixture into the fridge for 2 hours to set.
Prepare and line a baking tray.
Preheat oven to 160°C.
Roll out the biscuits - 1 tablespoon of dough into a ball and then lightly press onto the baking tray making sure to leave some room in between.
Add in any additional toppers here.
Bake for 10-15 minutes until lightly browned.
Allow the biscuits to cool for at least 15 minutes, the biscuits will set hard.
Store in an airtight container (if they make it that long) for up to a week.
