Cacao Protein Cupcakes (GF)
Healthy and delicious protein rich snacks are hard to come by - but these cacao cupcakes will certainly hit the spot.
Ingredients
1/2 cup cacao powder
1/2 cup coconut flour
1/2 tsp celtic salt
1/2 tsp bicarb soda
1/2 tsp baking powder
1/4 cup collagen powder
6 large eggs
1/2-1 cup honey or sweetener of choice
100g butter, melted
Icing (optional)
75g softened Butter
1 tbsp cacao
1 tbsp collagen powder(optional)
& honey/sweetener of choice
Method
Preheat oven to 160 degrees fan-forced.
Mix all ingredients together in a bowl until well combined.
Pour into 12 cupcake moulds, roughly 1/4 cup each.
Bake at 160 for approximately 18 minutes.
Mix icing ingredients together, ice when cooled and enjoy!
