ANZAC Biscuits

Makes 20 - 30 Biscuits

ANZAC Biscuits, perfect to share just in time for ANZAC day.

Ingredients

180g (2 cups) Oats

150g (1 cup) Plain flour

100g (1/3 cup) Coconut sugar

60g (3/4 cup) Desiccated coconut

115g (1/3 cup) Honey

125g Butter

1 Tsp Bicarb soda

2 Tbsp Hot water

Method

  1. Prepare and line a baking tray.

  2. Preheat oven to 160°C.

  3. Place the oats, flour, sugar and coconut in a bowl and mix to combine. 

  4. In a small saucepan, place the honey and butter, over low heat, stir until melted.

  5. Mix the bicarb soda with the hot water to try and dissolve it. Then add this mixture to the butter and honey. It should react and fizz up.

  6. Add wet ingredients into the large bowl with the oat mixture, mix well to combine.

  7. Place tbsps of the mixture onto your tray, and slightly flaten with wet hands. Make sure you allow room for the biscuits to spread.

  8. Bake for 8-10 minutes until lightly browned.

  9. Allow the biscuits to cool for at least 15 minutes, the biscuits will set hard.

  10. Store in an airtight container (if they make it that long) for up to a week.
