Almond Granola with Vanilla & Maple
Crunchy & sweet granola clusters.
This homemade granola is crunchy, toasted and just sweet enough. Naturally sweetened with pure maple syrup, this homemade granola recipe is super easy to make and utilises only the best ingredients.
Serve on your favourite smoothie bowl, with yoghurt or milk and make sure to add your favourite seasonal fruit.
Ingredients
2 cups oats
1 cup almonds
1 cup cashews
1 cup pepitas
1 cup sunflower seeds
1/2 cup dates or dried fruits
2 Tablespoons tahini
1/4 cup maple syrup
1 teaspoon cinnamon powder
1/4 cup coconut oil
2 teaspoons vanilla extract
Method
Preheat oven to 160 degrees celcius & prepare a baking tray.
Roughly chop up the cashews and almonds - or if you have a blender lightly blend them to break them up slightly.
In a large bowel combine the oats, almonds, cashews, pepitas & sunflower seeds & mix to combine.
In a small saucepan, melt together the tahini, coconut oil, maple syrup, cinnamon and vanilla. Once melted add this to the nut & seed mixture and mix until all of the granola is evenly coated.
Pour the mixture onto the baking tray and pop into the oven for 20 minutes.
After 20 minutes of cooking stir the mixture around and add in the dried fruit (we are adding it in now to prevent it from burning), press the mixture down slightly in compress the granola (this will help with making those clusters), then place the mixture back into the over for 15 minutes.
Once golden brown, remove from oven and allow to cool completely. Break into clusters and store into an airtight container.
