Jam Drop Biscuits

Makes roughly 24 biscuits

Ingredients

250g Salted butter

1/2 Cup coconut sugar

2 Tsp vanilla extract

1 Egg Yolk

2 1/4 cups Plain unbleached organic flour

1/4 cup (roughly) of your favourite jam or see chia jam recipe

Method

1. Using an electric mixer, cream the butter and sugar.

2. Add in the vanilla and egg yolk and beat until combined.

3. Add the flour in slowly and beat until a smooth dough has formed.

4. Cover the dough and pop into the fridge to rest for about 30 minutes (alternatively you can keep the dough refrigerated for up to 1 week or freeze it for up to 3 months and cook when unexpected guests turn up!).

5. Preheat the oven to 160 degrees fan forced.

6. Line 2 baking trays with baking paper.

7. Remove the mixture from the fridge. Roll a tablespoon of dough into a ball, and press slightly onto the tray. You will probably get around 16-20 per batch.

8. Use a measuring spoon or your finger to do a small indent in the middle of the biscuit. Then continue with the rest of the mixture.

9. Fill the indent with 1 tsp of your favourite jam.

10. Pop into the oven for 15-18 minutes.
