Collagen Chocolate Mousse

Recipe

Serves: 4–6: Prep time: 20 minutes + chilling

Ingredients

  • 200 g dark chocolate (70%+ cocoa), chopped

  • 20 g butter

  • 3 eggs, separated into whites and yolks

  • 40 g unflavoured collagen powder (shop here)

  • 2 tbsp maple syrup

  • 1 cup (250 ml) pouring (single) cream

  • 120 g fresh raspberries

Method

  1. Melt chocolate
    Place chocolate and butter in a heatproof bowl over a saucepan of gently simmering water. Stir until smooth. Remove from heat and allow to cool slightly.

  2. Add yolks + collagen
    Whisk egg yolks into the chocolate mixture one at a time.
    Add collagen powder and maple syrup, whisking until fully dissolved and smooth.

  3. Whip cream
    In a separate bowl, whip the cream until soft peaks form.

  4. Beat egg whites
    Using clean beaters, beat egg whites until stiff peaks form.

  5. Fold gently
    Fold the whipped cream into the chocolate mixture first.
    Then gently fold through the egg whites in two batches to keep the mousse light and airy.

  6. Chill
    Spoon into serving glasses or jars and refrigerate for at least 2 hours to set.

  7. Serve
    Top with fresh raspberries before serving.
