Simple Zucchini Fritters

With high protein breakfasts all the rage right now, we want to share a super simple fritter that is suitable for the whole family. Fritters are a great

option for a satiating and filling breakfast, supporting stable blood sugars & minimising snacking.

Time: 10 minutes prep,

15 minutes cooking

Dietary requirements: Gluten free option, Dairy free option

Serves: Makes 8-10 depending on size

Ingredients

1 Zucchini grated,

1 carrot grated,

3 eggs,

1/4 cup organic plain flour or (GF option) 2 Tbsp coconut flour,

1 tsp baking powder,

1/4 cup cheese grated,

Generous amount of salt and pepper

Optional add ins to mix it up: Fresh herbs, feta, shallots, capsicum, corn vege etc!

Method

  1. Grate the Zucchini and Carrot into a large bowl, squeeze the mixture with your hands to remove and draw out the water from the zucchini. Remove the excess water.

  2. Add the remaining ingredients until well combined.

  3. Preheat a frypan to medium - low heat.

  4. Add ghee or coconut oil and drop 1/4 cup of mixture in the pan. Depending on the size of your frypan you should be able to fit 3-4 each batch.

  5. Flip and cook for approximately 3 minutes each side and adjust the heat as necessary.

  6. Eat as is - a perfect snack or serve with your favourite toppings for a satiating meal.
