Simple Zucchini Fritters
With high protein breakfasts all the rage right now, we want to share a super simple fritter that is suitable for the whole family. Fritters are a great
option for a satiating and filling breakfast, supporting stable blood sugars & minimising snacking.
Time: 10 minutes prep,
15 minutes cooking
Dietary requirements: Gluten free option, Dairy free option
Serves: Makes 8-10 depending on size
Ingredients
1 Zucchini grated,
1 carrot grated,
3 eggs,
1/4 cup organic plain flour or (GF option) 2 Tbsp coconut flour,
1 tsp baking powder,
1/4 cup cheese grated,
Generous amount of salt and pepper
Optional add ins to mix it up: Fresh herbs, feta, shallots, capsicum, corn vege etc!
Method
Grate the Zucchini and Carrot into a large bowl, squeeze the mixture with your hands to remove and draw out the water from the zucchini. Remove the excess water.
Add the remaining ingredients until well combined.
Preheat a frypan to medium - low heat.
Add ghee or coconut oil and drop 1/4 cup of mixture in the pan. Depending on the size of your frypan you should be able to fit 3-4 each batch.
Flip and cook for approximately 3 minutes each side and adjust the heat as necessary.
Eat as is - a perfect snack or serve with your favourite toppings for a satiating meal.
